Perigord Truffle Dinner

For our Truffle dinner at Tuggeranong, we have taken inspiration from the cuisine of the Perigord region in France which is famous for its truffles. The classic menu highlights the cuisine of the region and the taste and flavour of the ‘black gold’.
Dinner is a superb five courses, with all truffles sourced from Canberra’s own Truffle Farm. Matched wines are available to purchase on the night as required.
Crème Du Barry
Cream of cauliflower with fresh chives and shaved truffles
Slow braised Berkshire pork shoulder and ancienne mustard croquette served with truffle aioli and fresh herb salad
Free Range Chicken
Free range Camden Valley chicken breast, marinated in fresh truffle shavings and thyme, slow roasted and served with creamy truffle and porcini mushroom sauce
Roasted free range two point Victorian lamb rack served with truffle mash, roasted heirloom carrot, bone marrow and truffle sauce
Triple Cream Brie
Sandwiched with freshly shaved truffle and matured overnight in house, served with crackers and grapes
