Jervis Bay wild caught scallop carpaccio, Australian style chorizo mild sausages, spicy salsa on oyster; served with Thai infused salmon tartare and seaweed linguini

Sir James Vintage Pinot Noir Chardonnay Sparkling 2009
The Sir James brand reflects the tradition, heritage and integrity of the man after which it is named. Produced from the classic Pinot Noir and Chardonnay varietals, the 2009 vintage is sourced from Yarra Valley and Tumbarumba. Rich and flavoursome and expressing characters of lychee, truffle and sourdough. A solid natural acid backbone is at the core of the elegantly structured palate.

Game farm marinated quail, with duck confit rillette, truffle foie gras vinaigrette, Tuscany pickled Enoki and red beet

2016 HRB Pinot Noir
Loaded with flavours of red and dark fruits, layers of spice and anise followed by silky savoury tannins.

Blood Orange Granite Sorbet

Southern Highlands Scored Wagyu Beef Tenderloin
Chef’s herb crusted tenderloin, served with portabella mushrooms stuffed with seven hours stewed forest mushrooms, blueberry sweet potato gratin, young vegetables and pomegranate jus

Hardy’s HRB Shiraz 2015
Vibrant and dense palate of sweet dark fruit, dark chocolate, liquorice and subtle oak spice. The palate is even, textured and long with an abundance of silky tannins.

 

Baked Passionfruit Tart
with vanilla mousse, praline ganache, cocoa crumble, and orange jus

Hardy’s Rare Liqueur Sauvignon Blanc
Complex melon like flavours, mouth coating spicy fruit tannins, a high degree of lusciousness and complex citrus spice.

 

Cheese Platter
King Island black label creamy double brie, golden fig confiture, buttered French brioche

Hardy’s HRB 2015 Cabernet Sauvignon
Layers of flavour evident with intense red and black currant, cassis and mulberry, intermingled with touches of mint, chocolate, black olive, tobacco and subtle oak spice. The palate is pulled together by fine lingering tannin structure providing a wine of great balance and persistence.
